3 Fast & Easy Delicious Rice Puddings
It doesn’t matter what season or what event you serve this tasty treat, a bowl of creamy rice pudding either served warm or really cold is a welcome treat. You could even say, its one of those comfort foods.
Perfect rice pudding should not be a mushy, soft puree, nor should it be too firm or dry. The best rice pudding should be one which is not too firm and not too mushy, and which is not too sweet. One of the traits that makes rice pudding so wonderfully delectable, can be summed up in one word: creamy.
Below are some really easy recipes for rice pudding that will not take up so much time in your busy schedule. Aside from being easy and quick to prepare, they’re very very delicious.
Ice Cream Rice Pudding
Ingredients
2 cups instant rice (such as Minute Rice)
1/2 cup vanilla ice cream
1/2 teaspoon ground cinnamon, plus more for garnishing (optional)
Directions
Prepare rice according to its package directions. Uncover, add ice cream & cinnamon, then stir. Divide the pudding among individual bowls then top them with additional cinnamon, if desired. Serve warm or at room temperature.
Simple Rice Pudding
Ingredients:
1/2 cup rice
3 cups cream or whole milk
Dash of salt
1/4 cup sugar (white), or 1/3 cup honey (I prefer honey)
1 1/2 teaspoon vanilla extract (use pure vanilla)
Dash of cinnamon
Dash of nutmeg
Dash of brown sugar
Instructions:
In a heavy-bottomed pan (so as not to scorch milk or cream), combine rice, salt, & milk. Bring to a boil on high heat , then reduce the temperature to medium so that your rice can simmer. You will simmer rice until it’s tender, which usually takes about 20-25 minutes. During this time you want to stir, stir, stir — you want a creamy white rice pudding, not a black, burnt mess, & milk can scorch easily!
When rice is soft but not mushy (al dente) remove it from heat and add other ingredients. Then, return it to low heat for about 5-10 minutes until thickened.
Grandma’s Rice Pudding
Ingredients:
3/4 c Carolina rice
1.5 qt. whole milk
3/4 c sugar
3/4 tsp salt
1/2 tsp vanilla extract
2 eggs
Nutmeg to sprinkle atop pudding
Directions:
Add rice, sugar & milk in a double boiler. Cook uncovered for approximately 2 hours, after 15 minutes, stir frequently so rice doesn’t clump. Take off stove. Beat 1 or 2 eggs (depending on taste) and fold in mixture with your vanilla extract. Put in a big bowl, sprinkle with nutmeg, cover the refrigerate ’til cool and firm.
Rice puddings are easy-to-make comfort foods that wouldn’t take up so much of your time to prepare. You could also try different variations by adding in other ingredients like fruits and etc for really easy and great tasting rice puddings.
