Apple Sponge Pudding Recipe
Ingredients:
8 apples; pared
Almonds (pounded)
Cinnamon
Raisins
Sugar
Wine (white)
8 eggs
2 c of sugar
Pinch salt
Grated lemon peel
1 c of flour (matzoth); finely sifted
Instructions:
Carefully cut pared apple tops off. You scrape insides out using your knife. You mix scrapings w/ wine, almonds, cinnamon, raisins & sugar.
Spoon mixture onto apples’ cavities then cover w/ removed tops. Arrange them on greased pudding-dish then stew about few mins, avoid breaking them.
Beat sugar & eggs together. Add salt & lemon peel, beating ’til thick for 30 mins. You fold 1 c sifted flour in. You pour batter all over apples then bake them in moderately heated oven.
Best when served w/ wine-sauce.
