Baked Plum Pudding Recipe
Ingredients:
1 bread loaf (stale); grated
1 qt milk
1/2 lb currants
1/2 lb raisins
1/4 lb citron; cut into large-sized slip
1 nutmeg
1 Tbsp mixed cinnamon & mace
1 c sugar
1/2 c butter
1 glass wine
8 well-beaten eggs
Instructions:
Have milk boiled then you add grated-bread. Tightly cover pan then steep about 60 mins. Meanwhile, soak & dry currants together w/ citron, & raisins.
Mix bread w/ citron, spices, sugar & butter. Add wine. Then beat eggs lightly then pour into cold mixture. Gradually add currants & raisins which have been dredged w/ flour. You stir well to combine.
Transfer into greased dish then bake for 2 hrs. Best when served w/ sugar, wine & wine-sauce.
