Bird Nest Pudding Recipe II
Ingredients:
5 large apples (tart)
Sugar
Raisins
Almond; pounded
Cinnamon
4 large eggs
1 c sugar (pulverized)
1 c flour
Wine (white)
Rind from 1 lemon; grated
Instructions:
Pare apples & cut tops off. Scrape the insides leaving them whole. Combine scrapings w/ almonds, raisins, cinnamon, sugar, wine & lemon peel. Mix well to combine.
Fill apples w/ prepared mixture then cover w/ removed tops. Place them in greased dish then stew for minutes.
Meanwhile, create sponge-cake batter by lightly mixing eggs, sugar & flour. Pour this into apples then bake for 30 mins.
