Blancmange (Lemon) Pudding Recipe
Ingredients:
2 Tbsps of cornflour
A pint water
Sugar
2 large eggs
1 large lemon
Half pint milk
Lemon essence
Eggs; separated
Instructions:
Place water into enamel-saucepan then heat ’til boiling together w/ lemon rind. Once boiled, you add cornflour dissolved in ice water. Boil again quickly. Add lemon juice & sugar.
Beat eggwhites ’til frothy & stiff then you add into mixture lightly. Pour mixture onto mould. Create custard by combining sugar, milk & lemon essence. Add in eggyolks.
