Boiled Lemon Pudding Recipe
Ingredients:
1/2 c of suet; chopped
1 pint breadcrumbs
1 large lemon
Lemon rind; grated
1 c sugar
1 c flour
1 tsp salt
2 eggs
Instructions:
Combine flour, sugar, breadcrumbs & suet. Mix well then add lemon rind & strained juice. Add milk & eggs blending ’til mixture moistens & ’til batter is thick.
Pour into greased mould then boil about 3-4 hrs. Turn dish out once done then sprinkle w/ sugar that had been sifted then serve hot w/ lemon-sauce.
