Cabbage Pudding Recipe
Ingredients:
2 lbs lean veal leg
2 lbs beef-suet
1/2 small cabbage; scalded
Nutmeg
Mace
Pepper
Salt
Grapes (green)
4 eggyolks
Butter
Instructions:
Chop together beef-suet & veal then grind in mortar. Add scalded cabbage. Season w/ nutmeg & mace. Season w/ pepper & salt.
Throw in grapes then stir to combine. Beat eggyolks well then add into mixture. Scoop into leaves of cabbage then you wrap them up. Cover w/ cloth then tightly tie it over. Have it boiled for 60 mins. Serve w/ melted butter.
