Calf’s Foot Pudding Recipe
Ingredients:
2 calf’s feet; cleaned & boiled
Penny-loaf crumbs
3/4 lbs of beef-suet; finely shredded
Nutmeg; grated
1/2 lb currans; washed well
1/2 lb raisins; shredded & stoned
1/2 lb sugar
6 eggs
Salt
Cream
Instructions:
Clean calf well then boil ’til fairly done. Remove all bones. Shred meat once cold then combine w/ crumbs in bowl.
Add beef-suet, nutmeg, currans, raisins, sugar & eggs. Season w/ salt. Blend well together, adding enough cream to wet all ingredients.
Transfer into greased cloth then tie tightly. Boil for 2 hrs.
