Carrot Pudding Recipe II
Ingredients:
1 & 1/2 c of sugar (powdered)
8 eggs (separated)
1 & 1/2 c of carrots; peeled & grated
1/2 c of almonds; grated
Rind from 1/2 lemon; finely-chopped
1 Tbsp wine
Instructions:
Beat together eggyolks & sugar then add carrots in. Stirring together then add lemon rind, almonds & wine. Slowly beat in eggwhite.
Pour into greased pan sprinkled w/ some flour. Have it baked slowly in oven for 60 mins.
