Simple Bread Pudding w/ Lemony Sauce

Ingredients:

3 lg eggs
1/2 c chopped pecans
1 1/4 c sugar
2 c milk
1.5 tsp vanilla
1 1/4 tsps ground nutmeg
5 c very stale bread with crusts on, toasted
1 1/4 tsps ground cinnamon
4 tbsps butter, melted
1/2 c raisins

For lemony sauce:

1 lemon, halved
1/2 c water
1/4 c sugar
2 tsp cornstarch dissolved in 1/4 c. water
1 tsp vanilla

Inside a bowl, beat the eggs on high speed until extremely frothy, about 3 mins.. Next, add sugar, vanilla, nutmeg, cinnamon and butter then beat on high until ingredients are thoroughly blended. Beat in your milk, then stir in raisins and pecans.

Place the cubed breads onto a well-greased loaf pan. Pour egg mixture over them and toss until bread is soaked. Let sit until you see only a narrow bead of liquid around the pans edges, about 45 minutes, patting bread down occasionally.

Place inside your preheated 350 deg. Fahrenheit oven. Lower the heat to 300 degrees and bake 40 minutes. Increase oven to 425 degrees and bake until your pudding gets well browned, about 15 to 20 minutes more. Serve on top of warm Lemony Sauce.

To make sauce: Squeeze 2 tablespoons juice from lemon halves and place juice into your saucepan; add lemon halves, water & sugar and bring to a boil. Stir in dissolved cornstarch and vanilla. Cook 1 minute over high heat, stirring constantly. Strain. Serve warm.

Quick Banana Wafer Pudding

Ingredients:

1 box vanilla-flavored wafers
6 bananas
1 large box instant vanilla pudding
1 – 12 oz. can evaporated milk
1 – 8 oz. container of Cool Whip thawed

Instructions:

Find a dish for your banana wafer pudding. Minimally an 8 by 8 baking/casserole dish. Get a bowl and pour your evaporated milk to the bowl. Fill the can with water then pour water into your bowl. Next pour instant pudding mix into the bowl and whisk contents of bowl for around 2 mins. Pudding should start to thicken.

In your selected dish, put a layer of vanilla-flavored wafers across the bottom. Next take two (2) bananas and slice them up on top of your wafers. Finally pour some of your pudding on top of your bananas and wafers to cover them. Then repeat the layering at least 1-2 more times.

Lastly, stir your container of cool whip so it’s light and ready to spread. Now spread it on top of your layers in your dish. Refrigerate or leave out for at least 1 hour so the ingredients blend and wafers soften. Serve and accept compliments
