English Plum Pudding Recipe
Ingredients:
1 lb bread (stale)
pint warmed milk
1/2 lb sugar
8 eggyolks
1 lb raisins; floured & stoned
1 lb currants; floured & washed
1/4 lb citron; cut into slips & dredged w/ flour
1 lb salted beef-suet; finely chopped
1 glass wine
1 glass brandy
1 nutmeg
1 Tbsp mixed mace, cloves & cinnamon
8 eggwhites
Instructions:
Have bread soaked in milk. Stand & cool. Once cold, you add well-beaten yolks, sugar, raisins, currants, citron, beef-suet, wine, brandy & spices. Thoroughly beat mixture together .
Beat eggwhites ’til frothy & stiff then add into previous mixture. Pour onto scalded cloth, dredges w/ flour then firmly tie together. Allow some space for pudding to expand.
Boil about 6 hrs. Best when served w/ brandy-sauce or wine.
