Orange Pudding Recipe III
Ingredients:
2 large oranges
Yellow part of rind; grated
6 eggyolks
4 Tbsps of heavy cream
1/2 pack of Naples-biscuits; garted
1 lb butter; melted
Instructions:
Have oramges soaked in water then heat ’til boiling ’til tender. You change water for 3-4 times in order to remove its bitter taste. Cut oranges open then remove its pith & seeds.
Beat in mortar together w/ sugar “til paste-like in consistency. Add in eggyolks, cream & grated biscuits. Mix thoroughly then add melted butter.
Cool slightly then spread thinly at the bottom & brim of your pudding dish. Bake pudding for 45 mins.
