Curd Pudding Recipe
Ingredients:
3 qts milk
Erning
1/2 lb butter
6 large eggs (set aside 3 eggwhites)
1/2 nutmeg; grated
Lemon zest; shredded
Salt
Sugar
Almonds; blanched
Instructions:
Combine erning w/ milk. Bread down w/ your hands once scummed. Drain then grind w/ mortar & pestle. Add butter & well-beaten eggs.
Add grated nutmeg & lemon rind. Season w/ sugar & salt as desired. Beat ’til thoroughly combined. Pour into small greased pans then bake for 15 mins.
Lay w/ wrong-side-up then top w/ almonds & sprinkle some sugar all over.
