Iced Pudding Recipe
Ingredients:
3/4 lbs of almonds (Jordan); parboiled
1 qt of bitter-style almonds; skinned
3/4 lbs white sugar (pounded)
6 well-beaten eggyolks
1 qt cream; boiled
Instructions:
Have almonds parboiled then add skinned almonds. Beat together ’til paste smoothens. Add sugar, eggyolks, & cream.
You stir while heating mixture. Strain once done then add into frozen pot using your scraper. Once frozen & firm, you fill mould then cover w/ lid.
Immerse it in rough-ice ’til ready to serve.
