Liver Pudding Recipe

Ingredients:

1 lb of bread; grated
1 lb currans
1 & 1/2 lb combined marrow & suet
3/4 lb sugar
1/2 oz cinnamon
1/4 oz mace
1 pint of liver; grated
Salt
12 eggs (separated); set aside 6 eggwhites
1 pint cream
Almonds; blanched & shredded finely
1 tsp rose water

Instructions:

Combine bread, currans, suet, marrow, cinnamon, mace. liver & salt. Combine everything well then add well-beaten eggs. Pour it into cream.

Heat eggs & cream then pour into pudding, stirring well to combine. Pour into prepared mould then top w/ shredded almonds. Add rose water as desired.
