Orange Pudding Recipe IV
Ingredients:
4 oranges (Seville)
10 well-beaten eggs (set aside 6 eggwhites)
3/4 lb loaf-sugar
1/2 lb of butter; melted
Juice from 3 oranges
Instructions:
Have oranges pared thinly then boil its peel w/ enough amount water, changing 2-3 times to remove its bitterness.
Beat finely in mortar then. Combine eggs & sugar, beating about 30 mins. Cut in butter & orange juice. Mix thoroughly then bake ’til set.
