Orange Pudding Recipe V
Ingredients:
5 oranges (Seville)
1/2 round of long-bisket; sliced
Cream
6 well-beaten eggs
1/2 lb currans; washed
1/2 nutmeg; grated
Salt
Sack
Instructions:
Core the oranges then grate it. remove inside. Boil skin ’til tender then change water as necessary to remove its bitterness.
Have bisket scalded together w/ cream. Then add in beaten eggs. Throw in currans then season w/ nutmeg. salt & sack. You beat them thoroughly then spoon into orange-skin. Tightly tie w/ cloth then boil about 45 mains.
Best when served w/ wine, sugar & butter.
