Pearl Barley Pudding Recipe
Ingredients:
1/2 lb of pearl-barley
5 eggs
1 pint cream
1/2 lb of powdered sugar
1/2 nutmeg; grated
Salt
1 Tbsp rose water
1/2 l of butter (clarified)
Instructions:
Cree barley in water, changing it twice while boiling ’til barley becomes soft. Cool.
Combine eggs, cream, sugar, salt, nutmeg, rose water & butter. Add this into boiled barley, mix thoroughly. Puff paste around edges of dish then bake.
Best when served w/ sauce made out of butter, sugar & rose water.
