Plum Pudding Recipe II
Ingredients:
1 lb currants
1 lb raisins
1 lb of shredded suet
1 lb flour
1/4 lb candied-orange & lemon rind
Citron; thinly cut
1/2 lb moistened sugar
6 well-beaten eggs
1 glass brandy
Ginger
Cloves
Nutmeg
Sugar; sifted
Eggwhites; beaten ’til frothy stiff
Instructions:
Combine currants, raisins, suet, flour, candied peels, citron & sugar. Blend thoroughly after every addition. Add beaten eggs & brandy, stirring well.
Beat everything together about 30 mins then set aside for few minutes. Season w/ nutmeg, ginger & cloves as desired. Pour into pudding basin then boil over water slowly for 6-7 hrs.
Serve w/ beaten frothy eggwhites w/ sugar.
