Potato Flour Pudding Recipe
Ingredients:
1/4 lb goose fat
10 eggs; separated
3/4 lbs sugar; sifted
Lemon peel; grated
Lemon juice
1/2 tsp salt
1/2 lb potato-flour
Instructions:
Stir fat ’til creamed then gradually add eggyolks, sugar, lemon peel, lemon juice & salt.
Combine flour & eggwhites, beaten ’til stiff. Pour mixture into greased pudding pan. Bake pudding in moderately-heated oven. Best when served w/ raspberry-sauce.
