Potato Pudding Recipe
Ingredients:
8 eggs; separated
1 c sugar
4 Tbsps of almonds (blanched); pounded
Lemon peel; grated
1/2 lb potatoes; grated
1 tsp salt
Instructions:
Prepare & grate potatoes then cook a day prior to using.
Combine eggyolks & sugar then add almonds in, as well as your lemon peel. Pour in lemon juice. Add prepared potatoes. Lightly beat eggwhites ’til frothy & stiff then blend into mixture lightly. Season w/ salt.
Pour into greased pudding dish then bake in your oven by placing atop pan half-filled w/ boiling-water. Bake abut 30 min.
Turn pudding out into platter once done. Best when served w/ wine.
