Rum Pudding Recipe
Ingredients:
2 eggs; separated
1/2 c sugar
1 Tbsp rum
1 pint cream
Lady-fingers; split into half
Whipping cream
1/2 c fine marron-glace; chopped
Coarse salt
Ice
Instructions:
Have eggyolks beaten lightly w/ sugar then you add beaten eggwhites ’til stiff & frothy. Add rum. You whip cream ’til stiffened then you add into well-beaten eggs.
Have mould lined w/ lady-fingers then spoon whipped-cream layer on top. Sprinkle chopped marron all over the cream. Repeat layering ’til mold has been filled.
Top w/ cover then pack mould in ice & coarse salt for 3-4 hrs.
