Sago Pudding Recipe
Ingredients:
4 oz sago
Water
1/2 c of candied shredded lemon
1/2 nutmeg; finely-grated
2 oz blanched almonds
3 oz of grated biskets
Rose water
1/2 pint cream
6 eggs; separated (set aside 2 eggwhites)
2 Tbsps sack
1/2 lb butter (clarified)
Sugar
Salt
Instructions:
Wash sago w/ 3 c water. Place in pan then boil w/ 1 pint water. Cool once done then add candied lemon, nutmeg, almonds, biskets, rose water, & cream.
Beat eggs well together w/ sack then pour into sago. Add butter. Blend thoroughly then add enough salt & sugar as desired.
Pour into pudding dish then bake ’til set.
