Suet Pudding with Pears Recipe
Ingredients:
1/2 lb suet; chopped ’til fine
1 stale breadloaf
2 eggs
1 c sugar
1 tsp salt
1 tsp all-spice
1 tsp cloves
1 tsp cinnamon
1 tsp grated lemon peel
Flour
2 tsps baking powder
Pears; halved but w/ stems intact
Lemon; sliced
Cloves
3 Tbsps syrup
Instructions:
Finely chop suet ’til powdered. Have bread soaked then squeeze excess liquid out then add into suet. Manually mix suet & bread then add sugar, eggs, salt, lemon peel, cinnamon, cloves & all-spice.
Add the flour gradually enough for mixture to be handled then shaped into ball. You sift baking powder into flour. Have pears pared, slice into half but leaving stems intact.
Arrange then large-sized kettle then pour pudding into pear’s cavity. Add sugar, lemon slices, cinnamon, cloves, & syrup.
You fill w/ cold-water. Have pudding baked about 30 mins. Bake it for 3 hrs.
