White Pudding Recipe
Ingredients:
1/2 lb rice
Milk
Penny-loaf; crusts removed & sliced
6 well-beaten eggs
1 lb currans
1 lb beef-suet; finely shredded
2 Tbsps rose water
1/2 lb powdered sugar
Salt
1/4 oz mace
1 large-sized nutmeg; grated
1 cinnamon stick
Instructions:
Have rice creed in enough amount of milk ’til soft. Drain in cullinder. Scald sliced bread w/ some milk. Beat eggs well then add beef suet, currants, rose-water, powdered sugar, salt, mace, & nutmeg. Beat mixture thoroughly but lightly.
Pour into pudding mould then boil about 30 mins.
